Healthy Alternative Baking

Zucchini Bread

This makes enough for 2 loaves

3 cups organic zucchini, grated
4 cups organic whole grain wheat pastry flour
1 tsp sea or celtic salt
2 tsp baking powder -aluminum free
1 tsp baking soda
1 tsp ground cinnamon or 2 drops of Young Living Cinnamon Bark Vitality TM Oil
3 cage free, organic eggs (use two eggs if cut in half)
2 cups organic sugar  or 1 and 1/2 raw blue agave
1 cup organic expeller pressed canola oil
2 tsp vanilla
1 tsp orange zest or 2 drops of Young Living Orange Vitality TM Essential Oil

Grease two 4 x 8 loaf pans. Preheat oven to 350 degrees.

Combine zucchini, flour, salt, powder soda and cinnamon in a large bowl. In a medium bowl beat eggs, sugar, oil, vanilla and zest. Make a well in the center of the zucchini mixture. Pour the egg mixture into the well and combine with a rubber spatula.

Divide dough equally into prepared baking pans and bake for one hour or until gold and cooked throughout, using toothpick tes

Flaxseed Morning Glory Muffins

1 c. whole grain cereal (I used organic. oat O's)
2/3c. milk, almond or rice milk works too!
1-1/4c. whole wheat or spelt flour
1/2 c. ground flaxseed
3/4c. peeled and chopped apple
1/2 c. sucanat
1/2c. finely shredded og. carrots
1/4c. shredded coconut1 TBSP. baking powder (aluminum-free)
2 tea. cinnamon
1/2 t. salt
2 eggs
1 TBSP. coconut oil
1 tea. Vanilla

Heat oven to 375 degrees.In a mixing bowl mix cereal and milk and let stand for about 5 minutes. Stir in remaining ingredients and divide batter into muffin pan. Bake about 20 - 25 minutes or until toothpick inserted in center comes out clean. Immediately remove muffins from the pan to cooling rack

Health Nut Blueberry Muffins

1 1/2 cup whole wheat pastry flour
3/4 cup organic sugar (I will do
1/2 sucanat, 1/2 honey or 1/2 raw blue agave)
1/4 cup oat bran
1/4 cup raw oats
1/4 cup wheat germ
1 teaspoon baking powder (aluminum-free)
1 teaspoon baking soda
1/4 teaspoon salt
1 cup blueberries
1/2 cup chopped walnuts
1 banana, mashed
1 cup buttermilk
1 egg
1 tablespoon coconut oil
1 teaspoon vanilla extract

1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups.

2. In a large bowl, stir together  whole wheat flour, sugar, oat bran,  oats, wheat germ, baking powder, baking soda and salt. Gently stir in the blueberries and walnuts. In a separate bowl, mix together the mashed banana, buttermilk, egg, oil and vanilla. Pour the wet ingredients into the dry, and mix just until blended. Spoon into muffin cups, filling all the way to the top.

Bake for 15 to 18 minutes in the preheated oven, or until the tops of the muffins

Banana Bran Muffins

2 tofu
1 egg
3 large bananas (1 1/2 cpu)
3t sunflower oil
1/3 cup honey
dash salt
1 cup whole wheat pastry flour
1 T. soy flour
3/4 cup oat bran
2 t baking powder
1/2 soda
1 gr. cinnamon
1 t ground nutmeg

Bake 375 .

Bake for 20-25 min. in the preheated oven, or until the tops of the muffins

Baked Oatmeal

Mix the following dry ingredients into a large bowl:
6 cups whole oats
4 tsp. baking powder (aluminum-free)

1 to 2 tsp. cinnamon
1 tsp. salt

Add the wet:
2 cups rice or goat’s milk (or buttermilk, for the live cultures!) or Apple Cider
4 eggs
3/4 cup oil (I sometimes do half applesauce, half oil, to cut down on the fat)
1 cup honey or raw blue agave
1 tsp. vanilla
3 cups of fruit of choice (bite-size pieces: I do a combo of any berries, or even sliced apples)
1 cup chopped nuts (your choice, also optional)

Mix everything evenly, then spread in a greased/sprayed 9 x 13.

Bake in preheated 350 degree oven for 35 mins or so.  When it is completely cooled off, it cuts nicely into squares for snack or breakfast later in the week.

You can make today and bake tomorrow it freezes well, raw or baked.

Playgroup Granola Bars (24 bars)

2 cups rolled oats
(I use 1/2 real maple syrup, 1/2 sucanat)
1/2 cup wheat germ
3/4 teaspoon ground cinnamon
1 cup Whole Wheat Pastry flour
3/4 cup raisins (or half raisins, half dried cranberries or other fruit)
3/4 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup olive oil or coconut oil OR peanut butter, OR half and half)
2 teaspoons vanilla extract
1/2 cup flaked coconut
1 cup sliced almonds (or mixture of favorite nuts)
1 cup miniature semisweet chocolate chips

Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.

In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins, coconut, nuts, chocolate chips and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.

Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
